First pantsless brewday!

Thu Nov 12, 2009 11:42 am

So after a year and a half of brewing all grain I need some great beer on tap and I don't have the time to brew ag. A copy of the recipe I found online said I need pale chocolate malt. I don't have that locally (I know I can order that from some of the BN's great sponsors but this would be a very small order and I'd like to get it locally if possible). Anything I can sub for this? Thanks.

EDIT:
As I am unable to attend my family's Thanksgiving as I had planned in Oregon (corporate america forcing mandatory overtime the day after thanksgiving..thats sales for you), and my wife and son will be going there themselves, I will be doing the following on thanksgiving

1 - BREWING BEER
2 - In my underwear (will be an extract, indoor brew)
3 - Drinking Beer
4 - Eating a turkey breast, mashed potatoes, and green been cassorole my wife will make me before she leaves

I'm bummed I'll be missing our family's first thanksgiving, the wife will setup the webcam though and I'll get to see little Niko chowin' down, at the same time I'm looking forward to this brewday.. It's gonna' be a fun one. My first PANTLESS brewday

Jamil says cutting the amount in half and subbing regular chocolate will work. It gives a diffrent flavor but it should work.

get the pale chocolate you sum bitch.

i freaking love it because it adds a chocolate character without much roast at all.

on another note....i see you have pellet citra hops on your website....drool....I'd love to buy some but i still have a pound and a half to burn through before i reload. Maybe I just need to brew some double IPAs.
suck it

+1. I've used some Carafa special in a pinch, but the pale chocolate gives some nicer toastier chocolate flavors

I actually switched the recipe up to mike riddle's tri-centennial stout and did an extract batch for the first time in a while.. got pretty drunk while making it and thought I effed it up of course, I took the hydrometer reading right after I topped it off with cold water (partial boil on the stove) and forgot that the water needs to miss with the wort and was wondering why my gravity was so low. The next day when I was sober I realized this, and had pitched a 3 1/2 liter starter (yes I know the book says 6 point something liter) after using a stirplate for a couple days for the first time and it's going off like crazy! I messed with the malt bill just a tad as I couldn't get eldme in the 8lb increment it called for so used 7lb, and used 3.3 pound for the wheat, and I changed the hops around for fun to make it 133 IBU predryhop, with apollo and summit. Should be tasty!

Hey Nico, finally got off my duff to start posting. It was cool getting to run into another BN-er at Brewforia! I'm guessing that starter worked out ok? No off aromas or anything?

Yeah man, good stuff! Nothing bad just fermenting like crazy. I was pretty mad when I thought I somehow poured out a lot of extract, I drank that alaskan barleywine, some descutes inversion, and gin n tonics the whole time so I didn't put it past myself to eff it somehow. Thanks for the help it made me much more confident in my starter. I thought they always went off like crazy in the flask.
