Are DME and LME interchangable?

Sun Jun 14, 2009 4:47 am

My supplier has no Liquid Malt Extract. Can I just substitute the same type of Dry Malt extract, and if so, what is the equivalent amount?

thanks

Most LME will give you about 1.037pppg, most DME will give you 1.046pppg. That being said you need about 20-25% less DME. To convert from LME to DME, divide by 1.25.

ex.

10lbs of amber LME will give you an OG of 1.070
10lbs of amber LME will give you an OG of 1.088
8lbs of amber LME will give you an OG of 1.070

Other than that just use the same extract but dry.

I think he meant :

10 pounds of DME will give you 1.092 in a 5 gallon batch. ( 10 X 46 / 5 = 92 or 1.092)

10 pounds of LME will you 1.074 in a 5 gallon batch. ( 10 X 37 / 5 = 74)

The gravities for the LME and the DME are a bit off from what I use (Different vendors, etc) but are pretty close and should give you an idea. The trick is to find out from your supplier what gravity you should get from the DME or LME you will be using.

Most LME's are 80% solids so where you would use a pound of DME use 1.25 lbs of LME. It should be as simple as that. If solids content does differ somewhat from the 80% value it isn't going to be by much. If you have to measure it by volume LME of 80% extract will have a specific gravity of about 1.415 and will thus weigh about 11.81 pounds per gallon.
