I am using Wyeast Bavarian 2206 on a Helles Bock that I put together on Monday. It is the first lager I have done in a while and I have a question about off flavors. I know that when lager yeasts are fermented in a warm temperature they give off some undesirable flavors and smells. My situation is the opposite. I have my primary in the brew fridge at 47 degrees. That is as warm as I can get the fridge to stay using the standard control. The fermentation appears to to extremely robust. It was a bit slow to get going, however, when it took off it threw up a nice big krausen and started. It looks like it is progressing along perfectly. What should I expect from this beer?
