I'll just chime in and say that the combination of full wort boils and late extract additions has done wonders to my extract brews and the potential extract "twang."

I have had that issue with extract that comes in a can. I try to use dry extract of find an extract that comes in a plastic jug or plastic container. Also old extract can give you some strange flavors. I went from partial boil on my stove to a full boil outside, and I think it made a huge difference in my beer.

Definitely. Start a brew journal. That's helped me improve one process at a time so I know what fixed what.

And it's a 'journal' not a diary. Diaries are for sissies.
