It's the yeast. They are very active fermenters and like to live on top of the fermenting worty, where they build a very strong Kraeusen.

I was wondering about that BUB. Do you think that it could be a good candidate for open fermentation? with that level of activity and mess, I don't think there would be any probs. Then once activity slows, place the lid on with an air lock. I don't know, what do you think?
