Either way will work. I follow the directions on the pack which usually involve putting the yeast in water for a bit to rehydrate. One pack is usually plenty for a normal gravity beer, but for a biig beer or a lager, I would pitch two packs per 6gal batch. And again, most of the dry yeast out there is fine quality, there is just not the selection of liquid yeast. Like pants, they are great to keep in the freezer just in case you need to brew without notice

I used dry one time, it was my first time, and my batch took 6 days to get started. I didn't rehydrate and assuming it being my first brew and I have no idea how long the kit was on the shelf, I started to stay away from dry.

I'll probably give it a try coming up though. They are cheaper and people keep telling me that they make a good beer if used properly.

What are some of the main styles or recipes you'd use them in? The US-05 or the S-04 your referring to in this post?

Safale is pretty good for pale ales and IPA's, I'm using it currently in a strong scotch ale but boy was it slow to start in this high OG wort. It can be used pretty much any time your looking for a nice maltiness. Occasionally noted to leave a bubble gum flavor but I'm told this fades with longer conditioning times.
