Sorry for making gender assumptions Iophon. :oops: Feel free to call me an :asshat: . Also sorry if you felt I came off as arrogant and presumptively authoritatey. Since I have not run a full scale experiment on the subject personally, I have to go off of what has been done by others and published, and as you have said, there are a lot of readily available studies that are often cited that may be out dated. That being said, thank you for providing the information on the trials you've personally run and your results and the link the the Basic Brewing information, I will make sure to check that out.

This is the sort of information I was asking for, if in a bit heavy handed manner. Something that I can look into source wise and see what others have done regarding this topic.

I have new items for my wishlist now :) until I get the bigger kettle and the wort chiller I will try and boil as much wort as possible. BTW I use distilled water that I pre chill. Should I be boiling it? I never have. :aaron

Should you? Yes. It's the only way you can be sure the water is sanitized.
Do you need to? Well, no, not until you find that one contaminated bottle that ruins the batch. It's really not likely that the water is contaminated .... but is it worth it? Boil it and while it's cooling sanitize the bottles and pour it back in.

There is alot of stuff you can get away with in homebrewing .... until it bites you in the ass.

Thanks for the info I will change my method to include boiling the water I add to the wort. BTW this forum is great. This kind of information just was not here when I started many years ago. :jnj

I don't boil. I've always thought that in order to have any sort of shelf life and continue to be consumable by humans, bottled water has to contain very little (if any) bad juju. Plus I know my own limitations. Adding another step to my brew process means adding one more thing I can screw up.

This is what my bottled water supplier says of their distilled, which is pretty consistent with the other companies I checked:

It is first put through distillation to remove the minerals and then filtered and ozonated. Samples from every run of any of our waters are microbiologically analyzed and held for shelf life.


That's certainly no guarantee. But it makes me feel better about dumping the stuff in my wort.

Hey brewing buddies... I just wanted to throw out a thank you to Bug - for his always quick and generally sound advice (for another hat from NE :) ). Thanks to iophone for adding depth and color. Thanks to spiderwrangler for asking for clarification. Thanks to iophone for backing up your comments. Thanks to spiderwrangler for owning it when you were clarified.

Just a great thread that shows the give and take that makes the BN army great. I like hanging out with big boys and girls that don't get all ass hurt.
