Help Converting Recipe

I have mostly brewed kits up to this point but wanted to try brewing the American Ale NHC winner Amarillo Pale (from the Sept/Oct Zymurgy). I have done some online research and tried using ProMash but I just can't seem to come up with anything that makes sense. Can someone help me convert this to a 5 gallon extract with steeping grain recipe please?

10.5 gallans
8.5 lbs Pilsner Malt
7 lb 6 row
1 lb Vienna
1 lb Munich
1 lb Biscuit
1 lb Wheat Malt
2oz Amarillo whole 9.6% First Wort
4oz Amarillo Whole 9.6% 60 min
2oz Amarillo Whole 9.6% 0 min
2oz Amarillo Whole 9.6% dry hop
OG 1.054

When I put in pro mash I get 125 IBU. Is that right? If it is, i was able to match the hops up using 9% AA pellet hops and would just need a malt bill recommendation. Thanks for any help that can be provided.

The vienna, munich, and wheat all need to be mashed. So you would need to do a mini mash with those 3 plus a half pound of so of 6 row for additional enzymes. Toss the biscuit in there at the same time instead of steeping separately.

For the remaining 4.5 lb pilsner and 3.25 lb 6 row, I would go with 6 pounds of LME. This should put your OG at around 1.053 or 1.054 depending on the efficiency of your mini mash. I have it figured around 70%.

This is probably about as close as you will get to the original recipe with an extract/minimash conversion. Hope this helps.

Thanks Bugeater. That is close to the same thing I got so I guess I didn't screw it up as bad as I thought.

2 more questions
I am brewing 3 other beers this day with a friend and would like to skip the mini mash if possible for time reasons. Does anyone have a suggestion for steeping grains I could add? Obviously I would be changing the recipe but I can live with that.

I am debating if I cut the bittering hops. My friend was looking for an Amarillo pale and this appears to be hoppier than I expected (not that there is a problem with that since my last batch was a pliny clone). Do you think I would be fine with 1oz for bittering and keep the rest of the hop additions per the recipe?
