Quick and easy conversion question. SNPA Clone

Thu Oct 25, 2007 3:27 pm

I found a Sierra Nevada Pale Ale Clone recipe over at Northern Brewer.

The grain bill is pretty simple:

% Amount Name Origin Potential SRM
-----------------------------------------------------------------------------
92.0 11.50 lbs. Pale Malt(2-row) America 1.036 2
8.0 1.00 lbs. Crystal 60L America 1.034 60

other batch data.

Batch Size (Gal): 6.50 Wort Size (Gal): 6.50
Total Grain (Lbs): 12.50
Anticipated OG: 1.053 Plato: 13.11
Anticipated SRM: 8.4
Anticipated IBU: 33.3
Brewhouse Efficiency: 77 %
Wort Boil Time: 70 Minutes

My question is:
For an extract version of this, can I use JUST Briess Sparkling Amber DME and no additional steeping grains? Here is my reasoning: the Briess product sheet says the DME contains Base Malts(my guess is 2row), and it contains Caramel 60L, and Munich Malt. The color says 8-13 degrees Lovibond. I choose 10.5 for the color in Promash, and when the OG got to 1.053, the SRM said 8.7. Now, I don't know if 10.5 is the correct number, I just picked the middle value. I think it is a pretty good fit as a conversion. This recipe calls for about 2 oz of cascades at flameout, so it is pretty aromatic. I think for a clean dryish Pale Ale like SNPA is, it should be just fine. If this works, this could be one of the easiest/good tasting SNPA Extract clones.

I guess I'll answer myself, since 44 ppl looked at this and didn't feel like typing anything.

What I used:
5.5 gallons
3 lbs Sparking Amber
3.82 lbs Golden Light

Should be about 7.0 SRM (Pretty close to SNPA)

1.053 OG

fine, I'll give the hops also:
60min 25.4 IBU's Chinook (12.7%)(didn't have Magnum)
30min 7.8 IBU's Perle (9%)
10min 4.3 IBU's Cascade (6.9%)
FO about 1.35 oz Cascade(6.9%)

Pitched a 1L WYeast 1056 Starter

Ok, I'll take a shot: Looks like you might make some beer with that recipe. Let us know how it comes out.

Test-

Your analysis looks good to me, but the intangible is that you will get a better tasting (and smelling) beer by steeping in some freshly crushed crystal malt rather than relying on amber extract, even though the composition is roughly the same.

There are a bazillion SNPA clone recipes out there, in AG, Partial Mash, and Extract form. It's probably THE most often cloned beer out there.

Most of them look something like this:

Pale Malt Extract
1/2-1 lb of Crystal 40
Perle hops for bittering
Cascade for flavor and aroma.
Wyeast 1056/WLP001/Safale S-05

Adjust extract amount to make a wort of around 1.060 with an 8 SRM
Adjust hop amounts to hit 35-40 IBUs
Dry hop it with an oz of Cascade if you want.

I know all that, I just wanted to try an ALL extract beer once. Just to take one thing out of the process to get an idea of what is going on. Saved me about an hour also! I'm still learning here, so it isn't a real big deal to me. I figure since this is a Pale Ale and most of the character is based on the hops it would be a decent one to try it on. SNPA is pretty dry, so it won't be that far off. I don't know.... we'll see though!

OK, but all I saw was you asking

The obvious answer is yes, but I gave you the "what else" that I thought you were looking for. Sorry for not being a fucking mind reader.

Nope, just asking what would be close enough with all extract. For some reason, the LHBS doesn't stock any extra light or just 2-row type extract. They are more geared toward AG. I'll be doing AG soon enough, because this extract stuff is pissing me off. Just feels like I'm cheating.
