Word to that.

I was just reading up on Palmer - I like to peruse it from time to time - and he says that the iodine test WILL tell you if starch conversion has occurred, but not to what extent. So, your starches can all be broken down, but perhaps not completely.

Mash for an hour and you are good to go.

I stand corrected - and I sit that way too!
