so that's interesting? well i think i'll get it sooner or later, so i have a concern with the orange peel, if i use it in the fermentation process can contaminate the beer but if i use it in the boil can get some tannin or bitter, so anybody ever use orange peel on a recipe?

Orange peel is usually added at the end of the boil, you're looking for some of the oils the citrus peel will contribute, and it may add some bitterness (the white part contains a lot of the bitter compounds). I've used it before with additions anywhere from 15 min to flameout, often staggered to potentially get a wider variety of flavors.

The only time that I ever still do a secondary is when I am pitching Brett or bugs, and doing some extended bulk aging and a true secondary. Other than that, I haven't done a secondary in years.
