Add Honey to a Kit Recipe??

Tue Mar 09, 2010 1:20 pm

I would like to add honey, or should I say I am asking if it would help to add 1 pound of honey to a recipe/kit (see below). The goal I am trying to achieve is higher alcohol content and a hint of honey wheat taste? Would I still be OK with one smack pack of Wyeast 1056?
Any other advice or condsiderations regarding the ferment or anything else, if I make this modification? Different amount of honey?

The recipe is as follows:

KIT INVENTORY:

SPECIALTY GRAIN
-0.5 lbs Briess Caramel 10L

FERMENTABLES
-6 lbs Wheat malt syrup

HOPS & FLAVORINGS
-0.5 oz Summit (60 min)
-1 oz Willamette (10 min)
-1 oz Cascade (10 min)

YEAST
-WYEAST 1056 AMERICAN ALE. Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and clean, and is very well balanced. Apparent attenuation: 73-77%. Flocculation: low—medium. Optimum temp: 60°-72° F.

I would use 2 packs. 1 pack might enough without the honey, but I'd still probably suggest a starter (or extra packs) for any beer over 1.035ish

Is making a starter a difficult thing to do? I didnt want to spend $13 on my yeast? Also, will the honey enhance this recipe or make it worse in your opinion?

It's difficult to do if you have bad sanitation.
