Sorta' forgot about this thread! I do extract and some times some steeping grains as well. I usually boil about 1/3 of the extract from the start to get a slight caramelization and add the first 1/3 hops 20 min. into the boil. I add the remainder of the extract at the 30 min mark, irish moss at the 45 min mark along with the second 1/3 hops. The last dose 1/3 hops i add at flameout. So far the slight bitterness balances the maltiness nicely but it is not overpowering while the flavor and aroma of the hops is a definite presence without harsh overtones.
OK, my description is threading into "sissyfied" waters but the beer is good and I had no negative feed-back from those who drank it!
