I will be brewing a partial mash recipe this weekend. It's from a extract recipe I brewed when I first started and now I've converted it to a partial mash recipe by multiplying 1.5 lbs per 1 lb. of the extract syrup.
My first question is how do I know if I need a 60 minute or 90 minute boil? The original extract recipe was a 60 min. Do the same? In the extract recipe I boiled about 2.5-3 gallons and added the remaining water to the fermenter. But now I have a 10 gallon pot and the capability to boil all 5 gallons? Do I do this? Do I change anything?
Next...infusion or step? Does it matter and is it dependant on anything?
