Boil kettle

I have a couple questions about boil kettles

1.) What size would you all recommend for 10 Gallon batches. I was thinking 60Qt Minimum. (For 5 Gal batches I would recommend 32QT).

2.) Would it be a problem brewing 5 Gallon batches in this 10 Gallon sized kettle?

3.) My current kettle is starting to show a lot of carmelization on the inside should I be concerned about this and clean the hell out of it?

1. 60 qt is great for 10 gal batches.

2. Shouldn't be a problem. Just remember that the surface area will be larger than what you probably have now so the evaporation rate will be greater. => more liquid boiled off over the course of a 60 or 90 min boil.

3. Clean that sucker. You won't notice it in darker brews but it will probably give you some flavors in lighter beers.
