The short answer is, yes, you'll have 70-80 IBU's.
The long answer is, yes, you'll have 70-80 IBU's, but those bitterness units will have a different character that's hard to describe. It's somehow less bitter, but the IBU's are there. Also, I find that you'll get a different flavor from those same hops. The flavors are definitely similar, but they are not the same. You should try it because that's the only way to really know.

So I made this recipe and changed the last 3 additions with mosaic hops and man is it good. Thanks tasty for such a great beer recipe

Thank you Tasty! I'm driving out to Colorado for my sister's wedding tomorrow with five gallons of Janet's Brown. Its my first attempt at it but I tasted it tonight and its delicious. I'm proud to have brewed it but the thanks go to you. You are the man!

So, I've been getting ready to brew this recipe and was planning to follow it exactly, but a local brewery was kind enough to fill my mason jar with a fresh, healthy-looking pitch of their london ale yeast (WY1968). What do you think, will that make a good substitution?

I'd definitely use, and consider mashing lower (148-149) or dropping some or all of the c-pils or both... Wyeast 1968 is an awesome yeast, but given the same parameters as Cal Ale, it won't attenuate the same. My .02
