Brewed a Belgian Tripel IPA with Chip Walton and company yesterday for an upcoming episode of Chop and Brew. Turns out Amarillo Hops are a little tricky to find...

Cool! Yeah, Amarillo harvest was way short this year. We are already down to less than a pound of it at the LHBS.

Brewing a dunkelweiss. The boil just started, and I was curious if I should add Irish moss. Should I?

I had about 5 pounds of dark liquid extract, then I added a pound of light DME. I steeped around 2oz of Carafa 2 dehusked, and I had very small bag on C-120 i put in also, dont think it will do anything since it needs mashed, correct?

For hops I added about .40 oz Kent Goldings at 60 minuts and split up and ounce of Citra hops into a few different additions, think the IBU calculator told me it would be have around 37 IBU. Also added some melted chocolate, according to Chip Walton's chocolate stout. I figure it was either give me a tasty choco citrus flavor or taste like the bottom of my trash can. I figured what the hell im going to have to throw out this extract soon or use it, so who knows.

Edit: So took a gravity reading after 2 weeks of fermentation its down to 1.012. Filled my glass with what was in the thief and it is a good tasting brown ale... I guess haha. light choco aftertaste and a citrus aroma throughout. Probably the best extract brew I have done. very good stuff. Think I'll bottle her up tomorrow as long as I dont see any gravity changes. :drink
