Right on Hoser...I pitch a bit bigger than the Mr. Malty calculator and I think I just need to catch the temp rise on the WLP007 sooner.

As for my beer...Chinook goodness but a little harsh I think. I have a feeling my water prep (Tasty APA water profile) with the big SO4:CL- ratio combined with some yeast bite may be throwing an off-flavor.

Actually, in reviewing Stone's new book, their water supply is much softer and with less SO4 than one would expect to see in such hoppy beers. I have it fairly close in my recipe based on my local water source. That could have something to do with the harshness from the chinook?

I hope so and hope it will tone down. I am still looking for flavor descriptors for it beyond what I've tasted so far. In any case, it is definitely off and I should have targeted more of a San Diego profile with such a high IBU monster as this.

Alright, my version of Arrogant Bastard 3.0 based on Tasty's C150L hypothesis with standard Stone whirlpool is now in JZ's hands. Waiting to hear the Pope's thoughts.......

Next time I will try:
90% pale
10% special B.
28 g chinook at 90min
56 g chinook at 0min/20 min WP (I think the hop profile is very close)

What is a suitable sub for Chinook? Will Northern Brewer work for Arrogant Bastard?
