Thanks everyone. The only vodka I have is the really crappy stuff my inlaws keep in my house to help them cope with me when they visit. I'm afraid to add it to anything. I think I'm going to pour the leftover extract into a freezer bag, purge as much air out of the bag as I can, seal it, and pitch it in the freezer. If everything goes well, it should only be there a couple of weeks. And if I end up doing either recipe again, I'll probably convert them to mini-mashes.

I wouldn't worry much about it, it's just like regular syrup wouldn't you think? I spose it doesn't have the presevatives and such but 1-2 weeks shouldn't hurt resealed in the fridge.
