You should be fine with throwing them in when you did at that point its more the hop characteristic than anything, so should have no worries. I have mine planned for the sometime in the next week or two. It's hard to be really motivated with the heat and humidity plus with all the fires going on who knows when the phone will ring to send me out on an overhead assignment. Plus it 2030 and its 99 out side. :shock:

Brewed mine on Saturday. Hit 153 on the mash but cooled it down with a little ice within 8 minutes. She went crazy yesterday and today. Blew off real good (good?) so I know I got her down to 147 quick enough.

Tomorrow, I'll be increasing to 72°.

Added 12oz of sugar to mine today. Brings the OG to 1.063 so I'm done with additions. JC is set to 74°.

How long should it take me to get to 85°? A week? A few days?

I went for about 5 degrees per day, all the way up to 90. My yeast began to flocculate about 6 days after kraeusen, with 82% attenuation. No bubbles in airlock, but I dropped another gravity point in the past 36 hours.

With your 5° per day, was it clean when you took your sample?

There was striation of clear wort above floccing yeast about halfway up when I took the sample. I'll let the yeast drop all the way before taking another reading and dropping the temp to ambient.

Just kegged my Saison. OG 1.060 FG 1.006 90% attenuation. 7% ABV. I ramped up to 80F over 5 days per Jamil. I used a single stage controller on the fridge and a drugstore heating pad set on low and let 'em fight it out. "Boooooooone dry!" It's very clean and tasty warm and flat. Dry, spicy, and very little to no alcohol burn. I'm pleased with it :D

VERY nice, brotha! I brewed saturday and I'm just at the 79° mark. Tomorrow, I'll open it up to 85°. I had a 1.057 OG with grains and added 12oz cane last night to give me a 1.063 OG with adjustments. Hopefully dry her down a little more. Used 566. What yeast you use?
