Mark your plastic spoon with a Sharpie. It works. I've done it on two spoons. Dry off the area of the spoon before you mark it. If you want to get really complicated, you can buy the Sharpie multi-color pack and color code each gallon line...
Also, you may want to do the following:
If you know how much water is typically left behind in your brewpot, use that as your 0 gallon point.
If you leave your IC in your pot the entire time, mark the spoon with your IC in the pot.
If you don't have your IC in the pot, either mark a separate spoon with the different lines or use dotted lines on the same spoon. Now you'll always know how much water/wort is in there.
Finally, if you have a slightly curved bottom (keggle) measure from the same bottom point all the time.
Another finally, make a backup--get a piece of wood or whatever and transfer your heights "just-in-case".
