I have a couple general Saison questions: Do I need D-Rest ( just kidding )

1. How well do Saison keep? Will it be good 6 months down the road?
2. Will standard bottles hold the higher carbonation ( for both shipping to comp and storage of the rest for personal consumption )?
3. What is your best guess for starting this? I have no temp controller but may in the next month or two.

It's official.... An "open" Saison comp.

As far as the timeline - we usually spend a week or so deciding on a recipe. Since this one is an "open" Saison comp where everyone gets to choose their own, I would say start planning. Once I have a "critical mass" I'll zone in on some deadlines. This one (unlike the previous one) will not be adversely affected by age - but might actually benefit from it. For those interested in participating - I would brew at your convenience, at least within the next 30 days.

In the meantime, if you are interested in competing this time around, please do the following:

1) register at http://www.asshatbrewingsoftware.com
2) send me an email ( mylo [at] asshatbrewingsoftware [dot] com ) confirming your interest to make a Saison and your desire to participate. Please make the subject of the email "BN Community Brew #3".

Don't know a date, but most likely (if it is set up like last time) it will be one bottle sent to 3 or 4 people for the first round and if you make it to the finals a few more bottles for that.

All instructions will be provided to each brewer several weeks before any shipping action is necessary. I would plan on bottling a six pack. Especially if you don't want to rebrew, in the event of a 1st round winner. Ideally, this would be in normal comp bottles (12 oz. brown, long necks).

TheDarkSide asked about carbonation levels. I would never consider putting any more than 3 vols of CO2 in a standard bottle. If you are hell bent on more carbonation - then feel free to use one of the stronger 375ml Belgian bottles. I wouldn't suggest a 750 - just because it would be pretty costly to send out to three different people.

I have a FAQ doc that I have been working on, that I will try to post up to the site. Keep those questions coming, and let me know if you need anything specific.
