I don't ever taste my sweet wort anymore. It all tastes the same to me. Just very sweet.

Ended up pitching my yeast this morning. The starter smelled AWESOME! I'm really looking forward to this beer.

Just took gravity on mine after 12 days. 1.005 for 91.7% attenuation and 7.57% ABV.

Fucking delicious!! Nice and dry and spicy.

I went with the WLP566 Saison II yeast. It was only 2 days old, straight from White Labs. I did a quick 12 hour starter on it just to wake it up and give it the opportunity to still grow in the wort. After listening to the Saison Jamil Show, I didn't want to risk it with the 565 Saison I.

Being so new, I don't think I'll win this but I'm trying to get some good feedback. Mylo is the only person I've ever gotten educated feedback from on any of my beers and that was only once.
