Need a recipe using un-malted wheat

I've got a bunch of wheat from my uncle (a farmer). It's un-modified. I'm looking for a good recipe to use un-malted wheat in. I'm working on homemalting some of it for use in a regular wheat recipe, but am not convinced of my malting abilities, so I want some recipes for unmalted wheat so I can try and have at least one good beer to take to a family reunion in late July. I really want to show up with a "family name" wheat beer to share with everybody. Maybe in a couple years when I get some hops growing, I'll be able to take it even closer to totally "family name".

Witbiers are brewed with unmalted wheat - using malted wheat in them is a "shortcut"

60/40 pilsner malt to unmalted wheat and you will need to do a cereal mash on the raw malted wheat to get the starch out of it. If you aren't sure how to do a cereal mash, the How to Brew has a good method either in the book, or on the free website.

Either that or perhaps a saison, a proportion or raw wheat isn't out of place in there I think.

I used unmalted flaked wheat in my Belgian Wit.

I'm definitely trying to malt some of it. I've got some soaking right now actually. I'm just wanting a backup recipe, just in case I really mess it up when I try to malt it. Thanks for the ideas.

Seems like a hell of a lot more work than simply performing a cereal mash. Could be a fun experiment if you have a bunch of time though.
