Jamil's Schwarz and no Hallertau

Fri May 02, 2008 9:13 am

I am brewing Jamils Schwarzbier this weekend and can't get any hallertau. As a sub I have crystal. I just smelled it and while it smells great its a little less aromatic than hallertau.

What do you think about bumping up the 20 and 0 minute additions from .5oz to .75oz?

I would check the alpha acid % first to make sure that you could up the amount for the 60 minute addition without over bittering your brew. If the % is lower than the Hallertau mentioned in the recipe by a percentage point or more, than I'd say go for it.
But if you want more aroma, I would definitely go for more in the flame out addition, maybe even a teensy bit for dry hopping.

You can bump up the later additions. It will be OK.

FWIW, I did that recipe and got judge comments like "needs more hop bitterness and aroma"... and that was with Hallertau hops, as written. (Still got a second for it, which, for my first lager ever, I was pretty happy with.) Idunno if my Hallertau hops were just a little wimpy, or if the judges were fatigued, or what, but this at least suggests that the beer won't be ruined by a little extra late hopping.

Sounds like they just don't know the style very well. This really isn't a style for hop aroma or flavor.
