Jamils Dry Stout

Im going to brew a Dry Stout using Jamils recipe. I am concerned about bottleing and kegging. I have listened to the podcast and am still not too sure of what to do. I want to enter this in competition and want to keg the rest. Jamil says both corn sugar and co2 will have odd affects on the finished product. He did mention Nitrogen though. Whats the best way to carbonate both bottle and keg without affecting my beer? Tap em and Tip em!

Well serving dry stout "on nitrogen" (a mix of 30% co2 and 70% nitrogen) is the ideal way to do it, you can do it with co2, just don't carbonate too much.

i'm in the middle of drinking this right now. i made 10 gal, 5 w/ 004, 5 w/ 007) the 5 gal w/ the 004 is almost gone. it was fan-fuckin-tastic, then it got a little CO2 bite because i'm a tool and didn't turn my regulator down. i shut it off and bled it for about 4 days and it was great again. the 007 version is kegged on nitro. i'm a nitro virgin so we shall see how it turns out. later, drew
