As a Christmas present, I am brewing beer for a few of my relatives. They choose the style and they get a case of whatever the result is. My cousin wants a 'sweet stout.' sweet, easy. the only issue is, a lot of the recipes i find call for the addition of lactose. i happen to be lactose intolerant. i know its a present for her, but i'm keeping half the batch for myself and i want to be able to partake. so, i'm looking into adding carapils, or something similar to add body and maybe a bit of sweet. any ideas, how much? no oatmeal, she wants to cook with it. how about blackstrap molasses? "designing great beers" says its only 50-60% fermentable, so i thought that might be good.
i am an extract + steeping or mini mash brewer, so i can't muck around with mashing temps. thanks in advance for your help!
