Ninkasi - Total Domination IPA

I love this beer.

It almost tastes like they use a Belgian yeast.

Any insight into the ingredients used?

My neighbor is a brewer for them. I am lucky as he gives me cases of the yeasty bottles that they do not sell. Lately he gave me two cases of Tricerahops. That is a massive beer.

I can tell you that they use an English Wyeast strain, not a Belgian one. I don't remember exactly which one but think it is 1968.

Could you ask your neighbor about the specialy malts and hops used in Total Domination? It would be cool to work out a clone of this beer. A buddy of mine said Ninkasi uses a British ale yeast, WY 1098, but this wasn't confirmed. Appreciate the info Bigbrews!

I recently moved down to SF from Eugene where I had lived for 5 years and I miss Ninkasi so much! The Believer was the beer that I would order every time I went out to a pub, and I mean everytime. Love the Otis too (and all of the rest for that matter). They're a really awesome brewery towards homebrewers too, they used to hook me and my buddy up with mason jars full of yeast (and pints) when the garage doors were up. So, I'll bet that they would be more than happy to help you shape a recipe if you contacted them.

My friend might be coming over tonight. If he does, I'll hit him up for some info.

Edit,

So he did come over and he said that the yeast is 1968. For Total Domination, it is Pale, Munich and CaraHell.

I'll see what I can find out. I felt that I was going pretty good about the yeast and malt and did not want to push it too far asking about hops. Next time I see him, I'll ask.
