Octoberfest Malt Bill with Ale yeast

Sun Feb 22, 2009 6:47 am

Guys

I was thinking of making an oktoberfest beer but now that I am kegging I can no longer use my fridge for fermentation. I know it wont be the same but do you guys have a suggestion for a yeast that would work well. My fermentation closet holds steady between 60-62 degrees. I was thinking alt, cal ale, or thames valley. Any suggestions?

thanks

I'd go either Cal Ale or Cal Common.

However, with a Ferm-Wrap and 2 temp controllers (one for the fridge and one for the ferm wrap) you can ferment in your serving fridge (you may have to adjust your serving temp a few degrees up, but not too much).

I would say either Wyeast 1007 or Pacman and just get the temps as low as you can. A swamp cooler could help you too:
