Dark Belgian Wheat help

Wed Feb 18, 2009 8:12 pm

I went to the City Steam Brewery in Hartford, CT last night and had their Winter Wheat Ale. They state it is a Belgian style beer. It was quite nice. Here is a description from their website:

WINTER WHEAT
A very complex DOPPLEDUNKELDOUBLEWEIZEN….which is sort of a cross between a dark German wheat and a Belgian Double, with a little oak aged Barley wine thrown in for good measure! 21P., served in a brandy glass.
Alcohol content: 8.5%

I would like to try to make something like this in the spring. Don't have any Barleywine to mix in but would love to come close. This is what I have come up with. Any thoughts?

I'd start with the dark wheat malt that is the base for Dunkelweizen instead of the light stuff... then you can cut back on the darker specialty grains.
