Sometimes I find myself a bit too preoccupied with judges comments or brewing a perfect interpretation of a particular style. In spite of this dedication to constantly tweaking my recipes to better align their flavor with the description set forth in the BJCP style guidelines there is one beer that I can't help but brew over and over again. This recipe below is a recipe that is on tap at my house constantly, I have tweaked it over time based on my tastes. It's my house recipe and I think it's perfect the way it is.
So I began to think - I'll bet most homebrewers who've been brewing a while have some unique beers that they like to brew over and over again. So I thought I'd pose the question here - Do you have a house recipe?

looks like a good recipe. i think i will brew it. have you attempted bumping up the gravity a bit?

When I adjusted by grain mill my gravity on this recipe jumped up to 1.060. There was a graininess that came through on that batch that I don't normally perceive, also there was more body. To me the increase in gravity hurt the overall drinkability , but, again, this is brewed only to my taste and I have no other comments to back me up; however, when I brought this beer to brew club, a great brewer for whom I have nothing but respect said, "You should explore this area further." Which, I believe, is his dry way of raining praise on this beer.
I suppose the main crux of this post is it may be good with a higher gravity, but I don't like the beer as much. I think that this beer should be as light as possible to let those hops really shine.

21# briess pale ale
1# victory
.5#40 crystal

.25#120 crystal
1oz chinook, 1oz amarillo @ 10 mins
1oz amarillo, 1oz cascade @ 5 mins
1oz amarillo, 1oz cascade @ flame out
s05 yeast

60% efficiency
8% abv
37 IBU's

keep in mind it takes me like an hour to get a beer down to pitching temps. Florida tap water is hot and the roomies insist that i leave some ice for them even when I'm brewing.

I used to use chocolate, but I just don't think the roast fits the "Amber" spirit.

What kind of cooling setup are you using? And do you have the space to use a double-coil saltwater & ice bath cooling rig? If so it's not that hard to set one up. Just get a spare cooler and fill it with ice and salt water and two immersion chillers hooked together. You can put one chiller in your kettle with the other one in the cooler and that should kill your temp in no time at all. Just my 2 cents.

My Go-To beer... cheap, and good. Fuck the judges saying don't use peated in a Shilling. I like it.

Right now what I'm doing is using one chiller with my hose water til its down around 100 then I'm pumping (with a little pond pump) ice water through the chiller to get it to 60ish and pitching. recently I started using a water bath with a fan to try to keep the ferment temps down. I really just need to get a pump and do the whirlpool chilling thing. maybe I'll use a pump and a pre chiller. if i can get a chest freezer on the cheap I'm gonna start lagers soon. might be a good reason to upgrade the chilling system to.

Check craigslist, bro. I got my Chest freezer for $80 and I know others get theirs cheaper. I bought a submersible pump too and I plan to submerge it in a bucket of ice water and recirc, too. I've already tested it at that temp at it works great. I may even go with a splitter on the chiller so I can simply turn off the bib water and turn on the ice water.
