autumn maple from the bruery, the yam beer

those guys were going bonkers for that yam beer, and i dont really like pumpkin pie, but their enthusiasm for that beer made me want that recipe. i have no idea where to start in formulating recipes. is anyone else gonna try making this, and if so, you want to share the recipe? the info i gleaned from the interview was that about 2.75 lbs of yams would be right for a five gallon batch, the yams were roasted, they were about 20% of the fermentables, and the spices were traditional but restrained. the label also mentioned molasses and maple syrup, i think.

well, even though i got no input here, i went ahead and brewed this with some help from patrick. i'm finishing up the sparge as i type. i added 3 lbs of oven roasted yams to the mash, but i dont get any yam aroma at this point. the color is an unbelievable clear orange. i'm adding 9 oz. maple syrup, 5 oz. dark candi syrup, a vanilla bean and 2/3 tspn. of pumpkin pie spice at flame out. i'm using jamils pumpkin beer as the base. we'll see how it goes, this is my first time using vegetables.

edit: scratch what i just said about clear wort. the first mash runnings were clear, but since the addition of the batch sparge water, the wort has been full of crap even after 5 quarts of recircs.

Well, I'm back on my yam beer blog, since I'm the only one interested in posting anything on it. It turned out pretty good. Next time I would add the entire yam, skins and all. The color is awesome. The yam aroma and flavor are definitely detectable, but I think the roasted skins would help give that a slight boost. I only added a teaspoon of pumpkin pie spice at the end of the boil, but I might cut that down to 2/3 teaspn in the future. Umm, what else. I'm probably gonna save this beer for dessert. Maybe put a scoop of vanilla ice cream in the glass and make yam beer floats. I like having a place where I can post and reply things all to myself.

I would be interested in the making this as well... sounds good.. even the floats. I'll have to schedule that one in to my future brews.

That does sound kinda good... how pronounced is the maple flavor? Is it Strong or just barely there? I'm just waiting for my attempt at Doc's Chocolate Coconut Stout to carb... might have to try that in a float.

i'm not detecting a specific maple flavor, so I can't comment on how the maple syrup even affects the flavor. it's a pretty rich beer though, full flavored and not something you can chug pint after pint of.

I haven't had the real thing from the Bruery, and now I would add more spice at the end of the boil because a week has mellowed it out so much that it's barely there. still good though.
