jamils dubbel

Fri Sep 12, 2008 6:28 pm

im brewing a recipe suspiciously similar to jamils dubbel in the am. i ordered 1.5# instead of 0.5# caramunich. it will only raise og by 2 - 3 points and color by 3m but im wondering about malt character. all grains were ordered pre-packaged so i cant remove any.
recipe is: 10.5 pilsner
1 munich
.5 aromatic
.5 special b
.5 caramunich (non-tard version)
0.75 belgian dark syrup
.5 cane sugar

im not gonna lose sleep but im looking for opinions on the potential impact

the extra crystal is unfermentable and will raise your terminal gravity leaving you a sweeter beer. additionally you will get more caramel flavor coming through in the end. so to address the first problem I would drop your mash temp a couple degrees to make a more fermentable wort. as for the extra caramel flavor, I'd either just live with it or perhaps replace 1/4 lb of the candi syrup with additional table sugar.

This just seems like one of those situations where you roll with it. It wants to be beer...brew it and ferment it :)

I brewed Jamil's recipe last weekend, how 'bout we do a side by side tasting comparison :)

Actually, that would be a cool experiment - re-brew with the 0.5lb caramunich vs the 1.5 lb. You'd for sure find out the difference. I'm sure that your dubbel came out fine though.
