two hearted clone

Hey all, I am going to embark on a two hearted clone (not necessarily clone, but ballpark). I love the centennial nose on this beer, but I am unsure of the hopping schedule and malt bill. I assume mostly American pils, not much caramal malt, centinneal for bittering, cascade and cent. for aroma (multiple additions past 15 mins) and then dryhop with a bit of cent. and cascade. Just worrying about ending up with too much bitter and not enough malt background. Not brewing this for another month or so, waiting for octoberfest to finish, then lager.

i would like to start playing with IPA's with a solid recipe, but something akin to two hearted is my goal (hence not starting with Jamil's recipe, I find some west coast IPA's a little too bitter up front, racer 5 kicks ass, no offense hopheads). The yeast will be White labs cal ale. Any thoughts/recipe suggestions on this are appreciated. And frankly, I'm surprised there isn't already a base recipe in the forum for two hearted that I could find, just advice on the hopping schedule.

I think if you want to make it close to Two-hearted, you need to go all centennial, and not use cascade. I personally really like to mix the two, but it's a different flavor than the hop flavor you get in two-hearted.

BYO says that there was a recipe in the Feb 2001 issue, but it's not listed online. If anyone has that issues (probably Doctor Scott)... it's in there.

I brewed this a little over two weeks ago and while not a 2-hearted clone in the strictest sense it was the inspiration. It was based off the BYO recipe which I found with some careful googling.

7.75# Briess extra light LME
3/4# Cane sugar
1# Vienna
1/2# Crystal 60L
1/2# Carapils

1/2 oz Centennial Plug 9.6% AA at 60,45,30,15,0.
1 oz Centennial Plug 9.6% AA dry.

OG- 1.072
FG- 1.010
2 packets US-05.

I took a sample a couple of nights ago and it was good. Not overly dry or thin, like I had expected given the low FG. It could use more hop bitterness but I tasted it before the addition of the dry hops and I am wondering if I am confusing the lack of bitterness with the lack of hop flavor. Only time will tell. I brewed a 2 hearted clone about a year ago. It was one of my best beers yet. Best of luck.

All right, think this is the recipe that I am going to go for. I realize I am using cascade and centennial, mostly because I would like a little more complexity than just straight centennial. Also splitting the 2 row up with some pilsner malt and using some cane sugar (.5 lb) to make sure it dries out enough. I will likely mash at 149 for 90 min. The yeast will be cal ale from white labs, with about a liter and a half starter. Will ferment at 65-68 and dry hop when krausen falls. Will let you all know what I think when the damn thing is brewed, I am especially concerned about how well cent. and cascade will intermingle, cause I LOVE the nose centennial lends to beers.

Hops addition time
1 oz cent. Mash
1 oz cent 60
1 oz cascade 60
1 oz cent 15
1 oz cascade 15

2 oz cent in fermenter after the fall of high krausen

All right,
I went too far.... between the incomplete conversion/failure to lauter properly, I ended up with a 1.052 OG hop bomb. I love centennial hops, but hearing from your non hoppy beer drinking friends that it almost made me spit it out is not the most encouraging thing. Although, with the new kegerator, it only lasted 10 days, and I now have a renewed will to exercise, cause if I don't and continue on at a half gallon/day, I will be a fat load without a job in no time! i have since figured out the conversion issue and hit my numbers dead on for a special bitter, which means the next time I have cal ale yeast in my fridge, this will be rebrewed, but taken down a notch!
