Then why not use WLP008 East Coast Ale yeast. This is the Sam Adams Ale strain. Very close to 001, not as attenuative but floculates better.

thanks for the idea, in my opinion a lot of breweries brew a Vienna with ale yeast to make a amber style beer.

I'm brewing an alt recipe next week in which I substituted vienna for about half the two row malt. Should be interesting. Not sure if it will still be an alt, but it should taste good.

Sounds very tasty. Is it an alt if you use American 2-Row? :wink:

Or by "two row malt" do you mean Continental pilsner malt?
