I've always had good luck with the traditional Scottish 70/- recipe. I have it on tap right now and it is the most well recieved beer amongst my friends and family. Everyone tells me it has a great flavor without being overpowering. I agree.
And the recipe is small, simple and easy. (AKA: Affordable and able to be found). I have made it as an extract beer and as an all grain and it always turns out great.

Alc: 4% ABV
IBUs: 11.5
120 Minute Boil
8 lbs - Maris Otter
0.25 lbs - Roasted Barley (300L)
0.60 oz - Fuggles (4.5% AA) - 60 min
(This can vary depending on how you like your beers... I like my IBUs low on Scottish Ales)
