I have made a hop addition around the 5 minute mark of Cascade many times and Summit a few times. What I have noticed is that you do get a nice citrusy hop aroma, but in competition I get dinged for it because you can tell between the citrusy hop aroma and a citrusy/spicy aroma. I usually add anywhere from 1/2 to 1/4 an ounce of hops at the 5 minute mark. However in a Wit I brewed 2 days ago I did not do any late hop additions but added more fresh bitter orange peel as well as some organic navel orange peel at the 2 minute mark. Right now it is fermenting with Wyeast Wit ale yeast at 63 and whenever I open the fridge I can smell the orange and the coriander unlike I ever had before. I will be interested to see how this goes.
In short, I have made some Wit's that I as well as friends have loved with late hop additions but the judges do not seem to enjoy that. So give it a shot, see what you think!
