Aging a Dopplebock

Fri May 05, 2006 8:32 am

I brewed my first Dopplebock on Tuesday. The brew day was great. Did a double decoction mash, re-pitched the WLP830 yeast that I have previously used for several other lagers (Pilsner, Vienna, Munich Helles, Marzen) and it is happily bubbling away at 50 degrees. My OG was 1.082, which was right on target.

My question is how long should I let this beer age? I am planning on kegging it after about 7 weeks of lagering. Will it be good to drink right away, or should I let it age in the keg for a while? This is the highest gravity lager that I have made. I know I can sample it periodically once it is kegged, but I just wanted to see if anyone had any experience brewing a Dopplebock.
