PPG values for adjuncts

Tue Jul 08, 2008 8:37 pm

I have been seeing variation in PPG values for Sugars, Molasses, Honey, etc.

Anyone have good starting numbers?

46 for granular sugar - white, brown, turbinado, whatever.
42 for honey
36 for molasses

Mama mole went to the opening of the mole hole and sniffed. "I smell sugar cane!" she said. Daddy mole squeezed in beside her, sniffed around and said "I smell honey!" Baby mole tried to poke his head out but there was no more room. "Wah! All I can smell is moleasses!(sic)"

Honey (and probably molasses) really do vary in sugar content. So any published number you see will just be an estimate.

If you're really curious, you could dilute some honey a measured amount, take a gravity reading, and do a little math to get the # for YOUR honey. Or you could just RDWHAH.

Yes the PPG of honey will vary. But not enough to really throw your numbers out the window. 42 would be a nice happy median.

I was curious so I did some tests.
After calibrating my hydrometer, I made several samples.
Tried to use 1oz in 1cup which should give the PPG rate.
Except for Brown sugar, 5oz in 2 cups, which I added in day 2 of Imperial Stout fermentation!

Final test results!

46 Brown Sugar
46 DME Light
36 Molasses
38 Honey

So, not as far off as I thought!

Now on to fermentability tests!!
