What is your favorite Hefeweizen Yeast?

What's your favorite Hefeweizen yeast and why? I am looking to make a great hefeweizen, something light like Paulaner's.

My last Hefe and Dunkelweizen I used 3068. The only other hefe that I have experience with is the WLP300. Although, my comparison really isn't apples to apples. I used a slightly different Wheat/Pilsner ratio for both, and I fermented the 3068 beers @ 62 degrees and the WLP300 @ 68 degrees.

I want to try to culture the yeast from a bottle of Paulaner, and do a side by side comparison that way. I'm curious if anyone has tried to do somehting like this.

Also, you left out the "I wear no pants and whatever falls into the fermentor wins" option
I think I've had about enough beer tonight...Now I need some Whiskey to sober up

My guess it that Paulaners is probably pasteurized.

WLP 380. ferment at 62 and it will leave a nice spiciness, with more clove than banana. i love it, it's all i use my hefes.

Is this a trick question? You only have one hefeweissen yeast on that list, Wyeast 3068. Bub has it right....for a change. 8) Anything else will just be a cheap imitation of the real thing.
