DIPA Hop Blend - Mosaic, Cascade, Apollo

I'm planning a DIPA following Vinnie's Pliny the Elder recipe (https://www.homebrewersassociation.org/ ... bleIPA.pdf), but I have different hops I'd like to use...big stash from NikoBrew!

Substitutions planned: Apollo for Columbus, Cascade for Centennial, and Mosaic for Simcoe.

Here are Vinnie's kettle additions for a 6 gal batch...
3.50 oz (99 g) Columbus* 13.90% A.A. 90 min. (sub Apollo - 18% AA)
0.75 oz (21 g) Columbus* 13.90% A.A. 45 min. (sub Apollo - 18% AA)
1.00 oz (28 g) Simcoe 12.30% A.A. 30 min. (sub Mosaic - 12% AA)
1.00 oz (28 g) Centennial 8.00% A.A. 0 min. (sub Cascade - 5.5% AA)
2.50 oz (71 g) Simcoe 12.30% A.A. 0 min. (sub Mosaic - 12% AA)

AA % are fairly similar, with the exception of the Apollo. Should I sub the hops straight across (with an obviously smaller Apollo addition)? Or should I change the balance? I've never brewed with Mosaic before, so I'm not sure what to expect there.

Planning to follow the same plan for dry hopping too. Vinnie calls for equal amounts of each hop in a double dry hop.

Anything you add with less than 20 min or so (including dry hop), you want to stay ounce for ounce. You will be extracting less AA then anyway, and if you drastically short your addition, you're gonna lose flavor/aroma. Incorporate the full weight additions at those times into your over all IBU calcs, and back off on your longer than 20 min additions to dial in the levels you are trying to brew to.

(recipe AA% x recipe weight) / your AA% = adjusted weight

Thanks, guys. I'm using BeerSmith to calculate the IBUs. What I was wondering is if the balance between the different hops would be appropriate at the same percentage (adjusted for AA), and the consensus (from here, other forums, LHBS) seems to be keep it the same.

Not necessarily. Some hops are more aggressive or assertive than others. There's no set rule or formula, just have to rely on experience. With those particular subs, I'd keep them pretty close to the same ratios, but maybe bump the cascade a touch. Keep notes, brew it again & try tweaking 1 of them.

Brewed this beer on Saturday. Everything went well...aside from ending up with too much weak wort pre-boil. Solution: boil 30 mins before adding first hop addition. Problem solved.

The hop blend smells great. All three hops play nicely together. I really get the blueberry notes from Mosaic that many have mentioned. I can't wait to taste this beer.

It's now fermenting at 67F in my temp controlled fridge after pitching a 2L starter of WLP090. I've used this yeast before for IPAs and really loved it's clean, fast acting style.

Planning a double dry hop with all three varieties - Mosaic, Apollo, and Cascade.

Love these mosaic hops. Going to keg and dry hop this weekend with Cascade and Mosaic.
