I don't know why the malt read out I read was converted that way, but that was what it said. I haven't read one in awhile, so it didn't trigger any bells saying "that's not how it's usually done."

Anyway, if it'll convert itself go for it. The key thing I was trying to convey was that if it's diastatic power is enough to convert itself, then there is no reason why you can't use all that in your grist. It'll be a wheat bomb for sure, and as many others have said, stock up on those rice hulls or your brew day will be hell.

I didn't think wheat wines were 100% wheat malt. The only one I've seen the ingredient list for was about 80/20 wheat to 2-row. It isn't a terribly common style.

Initially I had the beer being a 50/50 Blend of wheat malt and either 2-row or pilsner malt as a base. Then someone told me wheat could be a base malt and it intrigued me. Im just curious how something like this might turn out. I figure I might do up a small batch, say maybe 2.5 gals to test it out first. Best case scenario, I find out its pretty good and it would be bottled only, so I could always enter it in comps...worst case, its horrible and Ill never do it again.

Ultimately its going to be an APA in style with about 40-45IBUs, just interesting to see what flavor the wheat brings not to mention mouthfeel and head retention.

All the recipes are at or are close to 50/50 wheat and 2-row for the wheat wines. However, it will be intriguing to see how it works out using 100% wheat as the base. I envision it being too "wheaty" for lack of a better descriptor. Wheat wine is already pretty intense in that regard. Keep us posted.

I think it was the hefewiezen show. Jamil mentioned wheat will self convert and that you can use up to a 100%.

You're probably right - I'll have to go back and listen again. I am not disagreeing that it is possible. Quite the contrary. I just wanted to throw out some wheat wine recipes to show that they are not 100% wheat. That was the part I was disagreeing with. I am still quite interested to hear how a 100% wheat beer turns out.

I havent brewed it yet, but heres the basic recipe. Its an all wheat APA-style in the vein of Drakes 1500 Pale. The beer was late hopped like a IIPA so it has all of this juicy hop flavor and aroma, but the bitterness is normal for an APA. Im also only using late hop additions so I get the most flavor with moderate bitterness.

Auckland Wheat
2.5gal

5# White Wheat Malt
4oz Carawheat
.5 Roasted Wheat
.5oz nelson sauvin 15min
.5oz riwaka 15min
1oz nelson 5min
1oz riwaka 5min
US-05

70% efficiency (OG 1.055)
mash@152
54IBUs

quick question...for this much pure wheat how much rice hulls should I use? Assuming this goes well and I rebrew a 5 gal batch, how much rice hulls should I use for that??
