Yeah I think it is damn near impossible to ferment with that strain alone. Pretty much everyone I know ends up using the 565 for a few days then adds some dry yeast or some wine yeast. I tasted one that someone had used Chardonnay yeast WLP730 as the finishing yeast and it was wonderful.

Are you sure that the label states that the Hennepin was brewed in Belgium? The ownership of Ommegang by Duvel is old news. But I was under the impression that Ommegang would continue to be brewed in Cooperstown. I find it hard to believe that they would brew one or more of their flagship styles in Belgium - and then ship them here.

Thanks for the info on your fermentation schedule.

On the show last year when they had the Brewmaster in, he said they had run into some problems with a corking machine and could not get spare parts quickly enough so they had Duvel brew some of there beers in belgium and ship them over. I don't remember exactly which ones, but he made it seem like they would continue this arrangement as they expanded production. Randy also said that while he could taste some differences he doubted that anyone else could.

Bklyn, that was what I remembered from that interview as well.... also combined with the inconsistency on the labels I was only mildly curious, and not really even that concerned.

I had a 12 hour drive last week and happened to listen to that episode, no other way I would have known.
