'Crashing' the Secondary -- How long?

I heard Doc talking about crashing the secondary on the show last Sunday and I wanted to try it with my current brew. Is there a certain amount of time you should crash it before kegging? A few days, a week? More?

Depends on the temp...
If you get it down to 30-32 F 2-3 days should be enough.

Won't a LOW alcohol beer freeze at those temps??

Not usually, since it's a mixture you will get some freezing point depression. I usually try to keep it just above freezing (33-35F) just to be sure.

I do the same. Just out of irrational feer from those frozen beers of the past... you know, when it's a warm case so you throw some in the freezer? I know it's a lower temp, but I have a built-in thermostat that keeps me above 32f....
