dia vs heigth

is it better to have a kettle that is taller than wide or wider than tall

taller than wide will heat faster, i guess a kettle exactly the same diameter as the burner, if the burner heated the entire bottom surface, would heat the fastest, but it probably doesnt matter.

The big difference between tall/narrow kettles and short/wide kettles is the boil off rate. The more the surface area, the greater the boiloff. My tall narrow turkey fryer kettle boils off 1 gallon/hr while my wider stock pot will boil off 1.5 gallon/hr.

If you are batch sparging, the increased boil off can be a good thing. This forces you to sparge just a bit more to make up the volume. That, in turn, rinses a little more sugar out of your grain which increases your mash efficiency.

Come on now. It is not hight verses diameter. It is length verses thickness.
