variable volume fermenters?

more win has stainless variable volume wine fermeneters and sealed tanks http://morewinemaking.com/search/103209 ... aled_Tanks http://morewinemaking.com/search/103210 ... lume_Tanks is there any down side to using these for beer? i don't see any. and there way cheeper then a conical. those sealed tank could be fitted with a blow off and even a ball valve easier then shit.. and i would like to start a small brewery next year and those variable valume tanks would be great. there dirt cheep for there size. $340 for a 26.4g tank. or fuck.. $550 for a 79.2g tank. i chould do 3 batches in that. good deal. anyway.. what do you guys think?

I think the benefit the conical would have on that is the ability to dump the trub and harvest the yeast.

well i always leave the beer on the trub for 2 week anyway... and wouldn't be able to just take the top right off to top crop or you chould put soda keg lid in it pritty easilly
