How do you siphon your wort/beer

Yes Matt, Very close to what I use. I still use gravity w/ the carboy set up though. It's a lot faster (I do use a 1/2" racking cane) . I only start the siphon w/ the gas. So anybody w/o a co2 tank can just blow into the end and get the thing started (still better that putting your gnarley lips on the outflow tubing). Also, I don't worry about the air lock on the out flow. I figure w/ the positive pressure and the co2 blanket in the receiving vessel that it's probably overkill.

But I do transfer "Keg to Keg" alot. For that I use your set-up w/ constant pressure.

Always wonder if the CO2 transfer is a bit much, not harbouring any bad feelings to those who do it though, just what do you feel are the advantages?

I agree, it's probably overkill as far as sanitation is concerned, but I'll tell you this; it works every friggin' time! The siphon device I used previously was a piece of sh*t, as far as I'm concerned. With a pressure transfer there is no hoping or guessing or wishing that the Super Siphon or Auto Siphon or whatever you have is going to create an actual siphon. It will will work, with little or no air exposure every single time. I can't say I had that experience with the aforementioned siphon device.

Answered my own question elsewhere, you can transfer anytime and keep a good CO2 bed.
