Mine was easier than I thought.

I opened up the AC (which was the biggest PITA of the whole process) and then found the thermometer that also lead to the probe (yeah, I said probe!).

Luckily, all the wiring had little connectors on the end, so I pulled the wire from the powersupply to the thermometer and redirected it to where the other thermometer lead plugged into the on/off knob (yeah, I said knob, too).
