My next step is to source a temp control (probably from Johnson Controls) and bypass the AC's temp sensor so we can dial in any temp we need for fermentation. Anyone with experience on this that cares to lend a hand is greatly appreciated.

Mine was easier than I thought.

I opened up the AC (which was the biggest PITA of the whole process) and then found the thermometer that also lead to the probe (yeah, I said probe!).

Luckily, all the wiring had little connectors on the end, so I pulled the wire from the powersupply to the thermometer and redirected it to where the other thermometer lead plugged into the on/off knob (yeah, I said knob, too).
