Hmm... well.... closed vessel would help for contamination like all ozzies... but .... DMS. Listen to Brew Strong on DMS. There's no way that can work.

You're looking to not chill to simplify the AG process? Chilling isn't unique to AG brewing plus it's not very time-consuming or involved, no? Just buy an immersion chiller...

You know you're brewing in the country when you hit your second flood in 5 weeks. I can't get within 25kms of the brewery, and neither can the trucks or tradies. At least we're all in one peice which is better than a lot of people in the area. Will try again tomorrow

Finally made it back onsite after two days flooded out. Thumbs up to Greg the truckie who crossed a bridge under over a metre of water to get to Taylors Arm so we could get all our beer and packaging out in time to move the brewery starting Sunday. Looked like a real bad idea though when he stopped halfway accross... No way I was dragging him out! I took the long way round through the hills in the ute. Too deep for me!

Craig and I stacked 40 pallets and loaded them in the rain and mud - a great mess. The tradies cut the power to the boiler and we are finally getting close to being able to cut out the brewhouse and bottling line.

Please no more rain!
