Well, I see your point, but he would have to put some sort of insulator in between the right probe and the pot. Otherwise it might short out and he will loose his low limit. The best thing to do is probably some rigid probes (copper or best case - stainless) held away from the side of the pot by the plastic piece on the top of the diagram.

I like the idea of going with all copper or stainless. I hadn't thought about that. It should work because continuity is continuity. I like the simplicity too. If I use copper tubing it should be rigid enough not to worry about cointact with side of the pot and it is a wort friendly metal.

Next I need to find a check vavle that opens easy enough for the march pump.
